Don’t know how these cookies got their name, but they stay soft and the frosting does, too! I usually tint the frosting with a little food coloring just to make them more festive.
Original recipe makes 4 dozen
Ingredients
2 cups shortening
2 cups white sugar
5 eggs
4 1/2 cups all-purpose flour
2 teaspoons salt
2 teaspoons baking soda
1/2 cup butter
2 teaspoons vanilla extract
1 pound confectioners’ sugar
Directions
- Preheat oven to 350 deg. F (180 deg. C).
- Cream together shortening and granulated sugar.
- Beat in 4 eggs, then stir in flour, salt and baking soda.
- Drop by heaping teaspoonfuls on to ungreased cookie sheets.
- Bake at 350 deg. F (180 deg. C) for 10 to 12 minutes.
- Prepare frosting by combining melted butter, vanilla, 1 egg, and powdered sugar in a medium bowl. Beat with electric mixer until smooth. Frost cookies when they are cool.
