Banana Oatmeal Bread

          

This is an old family recipe, and it is very moist!

Original recipe makes 1 9×5-inch loaf

Ingredients

1/2 cup shortening
1 cup white sugar
2 eggs, beaten
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup milk
1/2 teaspoon ground cinnamon
1 1/2 cups mashed bananas
1/2 cup chopped raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan and set aside.
  2. Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  3. Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
  4. Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.
