Bette’s Pineapple Cookies

This family recipe has been with us for so long that we’re not sure where it came from, but it is loved by all! A wonderful soft, buttery sweet cookie that melts in your mouth with the crunch of crushed pineapple and the softness of a cake. Absolutely WONDERFUL just out of the oven! You will want to make lots!

Original recipe makes 5 dozen cookies

Ingredients

4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
2 cups white sugar
1 cup drained crushed pineapple
1 cup vegetable shortening (such as Butter Flavor Crisco®)
3 eggs, beaten
1 tablespoon lemon extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift flour, baking soda, and salt together in a bowl.
  3. Beat sugar, crushed pineapple, shortening, eggs, and lemon extract together in a bowl until thoroughly mixed. Add flour mixture to pineapple mixture; stir until just combined. Drop dough by teaspoonfuls 2 inches apart onto baking sheets.
  4. Bake in batches in the preheated oven until tops are lightly browned, 12 to 15 minutes per batch. Transfer to wire racks to cool.
