These bars taste just like carrot cake.
Original recipe makes 2 dozen
Ingredients
3/4 cup white sugar
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 cup raisins
1 cup grated carrots
1 cup water
1/2 cup orange juice
3 tablespoons butter
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup chopped walnuts
Directions
- Preheat oven to 325 degrees F (160 degrees C). Grease a 9×13 inch baking pan.
- In a small saucepan, combine sugar, carrots, spices, raisins, water, orange juice and butter. Bring to a boil, reduce heat and simmer for 5 minutes. Pour mixture into a large bowl and cool to lukewarm. Add flour, baking soda, and salt to the carrot mixture. Mix well, and stir in walnuts.
- Bake for 35 to 40 minutes in the preheated oven, or until a toothpick comes out clean.
