Original recipe makes 1 – 9×9 inch pan
Ingredients
1 egg
1 cup milk
1/4 cup vegetable oil
1 cup all-purpose flour
2 tablespoons white sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cornmeal
1/2 cup instant mashed potato flakes

Directions
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9×9 inch baking pan.
- Mix egg, milk and oil together. In a separate bowl, stir together flour, sugar, baking powder, salt, cornmeal and potato flakes. Stir egg mixture into flour mixture just until combined. Pour batter into prepared pan.
- Bake in preheated oven for 20 minutes, until a toothpick inserted into center of pan comes out clean.
