Easy Buckeye Bars

The traditional Ohio treat now made easier in bar form.

Original recipe makes 1 10×15-inch jelly roll pan

Ingredients

2 1/2 cups confectioners’ sugar
2 cups creamy peanut butter
1/2 cup melted margarine
1/2 cup brown sugar
1/2 teaspoon vanilla extract
1 (12 ounce) bag chocolate chips

Directions

  1. Grease a 10×15-inch jelly roll pan.
  2. Mix confectioners’ sugar, peanut butter, margarine, brown sugar, and vanilla together in a bowl. Press peanut butter mixture into the prepared pan.
  3. Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  4. Pour melted chocolate evenly over the peanut butter layer. Let buckeye bars cool completely before cutting into squares.
