Fresh Corn Salsa with Orange and Lime

Fresh corn salsa that is out of this world! Great for dipping or for filling fajitas and burritos.

Original recipe makes 2 cups salsa

Ingredients

1 1/2 cups corn kernels
2 roma (plum) tomatoes, diced small
2 tablespoons minced jalapeno pepper
1 tablespoon minced fresh cilantro
1 tablespoon orange juice
1 tablespoon lime juice
1 tablespoon olive oil
1/2 teaspoon salt

Directions

  1. Mix corn, tomatoes, jalapeno pepper, cilantro, orange juice, lime juice, olive oil, and salt together in a bowl. Cover with plastic wrap and refrigerate for at least 2 hours.
