This is hearty, almost chewy cranberry bread. You can substitute cranberry sauce for the whole cranberries if you desire.
Original recipe makes 2 – 8×4 inch loaves
Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup quick cooking oats
3/4 cup honey
1/3 cup vegetable oil
2 eggs
1/2 cup milk
2 cups fresh or frozen cranberries
1 cup chopped walnuts
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease two 8×4 inch loaf pans.
- In a medium bowl, stir together flour, baking powder, baking soda, salt, cinnamon, and oats.
- In a large bowl, mix together honey, vegetable oil, eggs, and milk. Mix in flour mixture until just moistened. Stir in cranberries and walnuts. Divide batter into prepared pans equally.
- Cook for 40 to 45 minutes, or until a tester inserted in the center of the loaves comes out clean.
