Lemon Poke Cake I

Another delightful variation on the Poke Cake theme.

Original recipe makes 1 – 9×13 inch pan

Ingredients

1 (18.25 ounce) package yellow cake mix
1 (3 ounce) package instant lemon pudding mix
4 eggs
3/4 cup vegetable oil
3/4 cup water
3 cups confectioners’ sugar
3 tablespoons water
3 tablespoons vegetable oil
1/2 cup orange juice

Directions

  1. Preheat oven to 375 degrees F (190 degrees C) grease and flour a 9×13 inch pan.
  2. In a large bowl, combine cake mix, pudding mix, eggs, 3/4 cup oil and 3/4 cup water. Beat for 2 minutes at medium speed.
  3. Pour batter into a 9×13 inch pan. Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes, or until toothpick inserted into cake comes out clean. Remove cake from oven and poke evenly with a fork every 1/2 inch. Frost while still warm.
  4. In a medium bowl, combine confectioners sugar, 3 tablespoons water, 3 tablespoons oil and orange juice. Mix thoroughly and pour over cake, allowing it to saturate cake.
