Mango Walnut Salad

A wonderful light and fruity salad for warm summer days. Feel free to adjust the ingredient amounts to fit your personal desires and tastes. Serve with your favorite vinaigrette or just leave it plain.

Ingredients

3 small mangoes, peeled and cubed
6 red lettuce leaves, rinsed, dried, and torn
1/2 cup walnut pieces
1/2 cup dried cranberries
1/2 red bell pepper, seeded and thinly sliced
1/2 green bell pepper, seeded and thinly sliced
1 carrot, peeled and sliced

Directions

  1. In a large bowl, gently toss together the mangoes, lettuce, walnuts, cranberries, red and green peppers, and carrot. Serve immediately.
