Oatmeal Carrot Raisin Cookies

Semi-healthy cookies that taste good.

Ingredients

1/2 cup chunky peanut butter
1/2 cup coconut oil
1/2 cup agave nectar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups whole wheat flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground cloves
2 cups old-fashioned oats
1 3/4 cups grated carrots
1/2 cup raisins

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Whisk peanut butter, coconut oil, agave nectar, brown sugar, eggs, and vanilla together in a bowl. Whisk flour, baking powder, cinnamon, salt, baking soda, and cloves together in a separate bowl; stir into peanut butter mixture until dough comes together. Fold oats, carrots, and raisins into dough. Spoon dough, 1 to 2 tablespoons per cookie, onto a baking sheet.
  3. Bake in the preheated oven until edges are lightly browned, about 15 minutes.
