A chewy oatmeal raisin bar cookie with a hint of cinnamon. If you don’t like raisins, candy or chocolate chips can be easily substituted for them.

Ingredients
1/2 cup butter, softened
3/4 cup white sugar
1/4 cup brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups quick cooking oats
1 cup raisins

Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.
- In a medium bowl, cream together the butter, brown sugar and white sugar, until smooth. Beat in the egg then stir in the vanilla. Combine the flour, baking soda, cinnamon and salt: stir into the creamed mixture. Fold in the quick oats and raisins. Spread evenly into the prepared pan.
- Bake for 10 to 12 minutes in the preheated oven, until the edges are starting to brown. Let cool in pan before cutting into bars.
