Pumpkin Apple Muffins

          

Chock full of good-for-you whole wheat flour, flax seeds, pumpkin, apples and walnuts!

Original recipe makes 12 muffins

Ingredients

1 cup all-purpose flour
3/4 cup whole wheat flour
1 1/4 cups sugar
1 1/2 teaspoons Spice Islands® Pumpkin Pie Spice
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon Argo® Baking Powder
1 cup canned pumpkin
1 apple, cored and shredded
1/3 cup Mazola® Corn Oil
1 egg
1 teaspoon Spice Islands® Pure Vanilla Extract
1/2 cup dried cranberries*
2 tablespoons flax seed
1/4 cup chopped walnuts

Directions

  1. Preheat oven to 375 degrees F. Combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking soda, salt and baking powder in medium bowl. Whisk together pumpkin, apple, oil, egg and vanilla in a large bowl. Add dry ingredients, mixing just until moistened. Stir in cranberries and flax seed. Portion into greased muffin cups or use paper liners. Sprinkle with walnuts.
  2. Bake for 20 to 25 minutes or until wooden pick inserted into center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan.
