This is a fresh tomato, garlic and basil sauce and is best in the summer when the tomatoes are fresh. It is a great side dish for lamb but is also great on its own.

Barb’s Curried Mango-Avocado Salad
Diced mango and avocado pair with a little lime, curry, and onion to make a great side dish for a barbecue. I brought a huge bowl of this to a small party, and it was devoured. You can also dice the ingredients finer to make a nice salsa-style dip.
KM-Style Watermelon
KM style watermelon is a really cool refreshing way to do watermelon! It is especially satisfying on a hot day. GREAT addition to any barbecue! Most refreshing if allowed to chill until cool in the refrigerator, but not required. Will keep in refrigerate for a week or so, but it’ll probably be eaten all before then.
Mojito Salad
Everything you love about a Mojito except the rum! After having a few friends over for some mojitos, I was in the mood for salad the next day and had all the right ingredients — better than the hair of the dog!
Fruit Salad with Lemon-Cinnamon Syrup
This is a sweet fruit salad intended to be served as a low-fat dessert. The syrup is essential; without it, you just have an ordinary fruit salad, for which you probably don’t need a recipe! You can vary the fruits to use what you have on hand. This is especially good with strawberries and melon. Bananas might be too overpowering, though.
Baby Beet Salad
Cold and refreshing. I don’t eat the onions, but their flavor infuses into the dish. Adjust orange juice and vinegar if too sweet or not sweet enough. It tastes even better the next day!
Grilled Okra Salad
This simple salad of grilled okra and tomatoes is very flexible, you can add or reduce the amount of ingredients to your liking, and even add other ingredients that are not in my list.
Mom’s Italian Potato Salad
This is one of my favorite recipes handed down from my mom. The best thing is there are lots of vegetables and flavors, and it’s usually a welcome change from standard American versions. The olives are the best part! To save time, I usually chop all the vegetables and make the dressing while the potatoes are boiling.

Garbanzo Bean Salad II
This recipe is a great way to use up a can of garbanzo beans or those last few spoonfuls of tomato sauce! It’s also very versatile so you can add different spices and vegetables as the mood strikes! You can also experiment with different vinegars and beans in the recipe. Can be served immediately or refrigerated overnight to allow flavors to combine and the vegetables to marinate in the liquid. Pasta sauce may be used instead of tomato sauce.
Chicken and Melon Salad
A good use for leftover chicken. You can substitute other melons, papaya, pineapple, mushrooms, or water chestnuts for the grapes or the honeydew melon.
