Quick and Easy Chicken Taquitos
My kids love the taquitos we get at the grocery store in the freezer aisle. They would happily eat them every day. However, the mean mommy that I am, am working on reducing the amount of processed food in our diet so I had to try homemade. After checking all the recipes for taquitos I could find, I decided to mix it up and create my own! So I took ideas from about 4 different recipes and went to town. My kids and husband have given their seal of approval. My very picky 3-year-old even had seconds! I serve them on a bed of lettuce with sour cream and do Mexican rice on the side.
Cauliflower Sheep
There’s more than one way to get creative in the kitchen! Make cute little sheep from cauliflower florets. All you need are black olives, fresh cauliflower florets, raisins, dry black-eyed peas, and toothpicks. Olives and black-eyed peas become the heads and eyes. The legs are raisins. Don’t play with your food? Well, not this time. So much fun.
Pineapple and Cheese Spread
This is really good, and so easy – no cooking required and no fancy spices. Mix ingredients in a bowl and serve with your favorite crackers. If sweet onions are not available and your onion is strong, add only half at first and then add more to taste.
Pumpkin Pie Seeds
The pumpkins are carved, the pies are baked, but how should you toast those pumpkin seeds? My favorite variation by far are these sweet pumpkin pie-spiced seeds. I’ve tried the stovetop method for coating the seeds, but they were too sticky and hard for my tastes, and easy to burn too. Try this baking method instead and they’ll turn out perfectly toasted and crunchy.

I don’t normally like hush puppies. They are generally too dry, too dense, and too bland for my taste. After tasting some in a restaurant that I actually liked, I decided to come up with a recipe of my own. This one deliberately uses stuff right out of the pantry so that it can be whipped up quickly and served fast.

This is almost easier than making it with a mix and a lot tastier! The best part is that you can make it with ingredients already in the fridge. I would suggest making a double batch though, because this is a crowd pleaser. This is also great with lime salsa.
