Refreshing Avocado, Tomato, and Mango Salsa

Looking for a refreshing salsa for a warm summer evening? This is our favorite. Serve with tortilla chips. This is also fantastic served on white fish. I often use a canned jalapenos instead of fresh.

Original recipe makes 8 servings

Ingredients

4 tomatoes, diced
2 mangos – peeled, seeded, and diced
2 avocados – peeled, pitted, and diced
1/2 cup chopped fresh cilantro
1 jalapeno pepper, seeded and minced
3 cloves garlic, minced
1/2 cup chopped red onion, minced
2 tablespoons fresh lime juice
1 tablespoon olive oil, or to taste
1 teaspoon fine sea salt

Directions

  1. Mix tomatoes, mangos, avocados, cilantro, jalapeno pepper, and garlic together in a bowl. Stir red onion, lime juice, olive oil, and sea salt into the tomato mixture.
  2. Cover bowl with plastic wrap and refrigerate for 30 minutes.
