Southern Coleslaw

This is a quick and original coleslaw for people who don’t like mayonnaise that is made with tomato and lime juice.

Original recipe makes 8 servings

Ingredients

1 medium tomato, diced
1 teaspoon salt
1 teaspoon pepper
1 (16 ounce) package shredded coleslaw mix
1/4 cup lime juice

Directions

  1. Place the tomato in a large bowl, and season with salt and pepper. Stir in the coleslaw mix and lime juice. Refrigerate for 10 minutes before serving.
