Tropiguac (Hawaiian-style Guacamole)

Tropiguac is my spin on guacamole. Its zesty, tropical flavor is a great appetizer to serve on a hot day. Cucumber is optional, but it’s an extra zero calorie vegetable that makes the guacamole taste cool and refreshing — and it also makes for more servings without adding cost!

Original recipe makes 6 servings

Ingredients

2 ripe avocados – peeled, halved and pitted
1/4 whole fresh pineapple – peeled, cored, and diced
1 mango – peeled, seeded and diced
2 small tomatoes, diced
1/4 red onion, diced
1/3 cucumber, diced
1 teaspoon chopped fresh cilantro, or to taste
2 limes, juiced
1 pinch garlic powder
salt and ground black pepper to taste

Directions

  1. Mash the avocados in a large bowl.
  2. Mix in the pineapple, mango, tomatoes, red onion, cucumber, cilantro, lime juice, garlic powder, salt, and black pepper until well blended.
