Vitamix® Guacamole Sarah’s Way

Delicious guacamole and crazy easy to make. If your avocados are large, you can use three. Don’t skimp on the salt or over-do the lemon. Lime juice can be substituted for the lemon juice. Take the seeds out of the jalapeno pepper for less heat. Otherwise it’s pretty fail-safe. We’ve created many new guacamole fans by this recipe!

Original recipe makes 8 servings

Ingredients

4 avocados – peeled, pitted, and chopped
1 roma tomato, cut in half
1/2 red onion, roughly chopped
2 tablespoons lemon juice
1/2 jalapeno pepper, seeded and minced
1 teaspoon salt

Directions

  1. Blend avocados, tomato, onion, lemon juice, jalapeno pepper, and salt in a Vitamix® blender on variable 2 or on the low setting on any blender until guacamole is chunky.
