A great loaf to warm you up on a cold, rainy day. It’s bursting with apricot and orange flavor and sure to put a pleasant smell in the air when it’s baked.
Original recipe makes 1 – 9×5 inch loaf
Ingredients
1/2 cup sultana raisins, chopped
1/4 cup dried apricots, chopped
1 tablespoon orange zest
2 tablespoons orange juice
3 tablespoons butter, softened
1/2 cup white sugar
1 egg
2 cups self-rising flour
3/4 cup milk

Directions
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan. In a small bowl, combine sultanas, apricots, orange rind and orange juice. Let stand for 10 minutes.
- In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour batter into prepared pan.
- Bake in preheated oven for 40 to 45 minutes, or until toothpick inserted into center of loaf comes out clean.
