This is a spicy-sweet salsa that starts off cool and ends in heat. It’s hot, but very refreshing. I keep the seeds in the peppers for maximum heat. This was a prize-winning recipe at our neighbor’s classic Cinco de Mayo party.

Watermelon Tomato Salsa
Terrific fruit salsa mix. Be sure to seed the tomatoes, otherwise it will be too watery. There is never anything left of this…it seems to appeal to all tastes.

Red-Ribbon Roasted Salsa
This recipe originated from a recipe that was supposed to duplicate that of my favorite Mexican restaurant. I’ve heavily modified the original recipe and like this variation SO much more! It’s relatively easy. This makes a medium-hot salsa. I’ve named it ‘Red-Ribbon’ because it took second place at my company salsa competition last Cinco de Mayo (lost first in a tie-breaker!).
Fresh Tomato Salsa Restaurant-Style
My family loves the salsa from Carlos O’Kelly’s. This is as close as I can come and it is delicious! You can add anything to this salsa, we’ve added different peppers or more garlic. It’s always good.
