Loquats are a yummy small fruit with the flavors of mango and peach. They are hard to find in the grocery stores. The best places to find them are at a farmer’s market or else a friend with a tree! Great over chicken and fish.

A sweet, citrus, and spicy salsa. Perfect for an outdoor summer party. Would be great paired well with some chicken.
Mango Ceviche
Ceviche is a Peruvian dish that is usually made with rocoto peppers. Since rocoto peppers are difficult to obtain outside of Peru, jalapeno peppers are an adequate substitute. Excellent as dip for tortilla chips. Excellent served in any option with blackened fish (i.e. ahi tuna), blackened chicken, or char-grilled steak.

Mochi is a sweet, short-grained, very glutinous rice with a high starch content. Mochi is commonly used to make rice cakes, for which it is pounded in large tubs until it becomes extremely sticky. It is then formed into balls or squares, which can be found in Japanese markets. Mochi is also used in confections and rice dishes. It can be bought in most any Japanese grocery store. This is a delicious way to eat it!

I created this recipe as a quick fix for something sweet and protein-filled for post-gym workouts…eventually the kids started taking it away from me and eating it themselves! Substitute what you like for a sweetener…I’ve used stevia, aspartame, and agave nectar, all with success. Greek yogurt takes some getting used to — it’s not for everyone!
