Betty Baker’s Strawberry Salsa

A fruity salsa that was just made for summer dipping! If you’re using dried herbs in place of fresh, use a lot less.

Original recipe makes 3 cups

Ingredients

2 cups strawberries, sliced
1 cup grape tomatoes, coarsely chopped
1/2 cup green onions, chopped
2 tablespoons jalapeno pepper, seeded and minced
1/4 cup fresh mint, chopped
2 tablespoons cilantro, chopped
1 teaspoon grated lime zest
2 tablespoons lime juice
2 tablespoons balsamic vinegar
1/2 teaspoon coarse salt
1/2 teaspoon ground black pepper

Directions

  1. Place the strawberries, tomatoes, green onions, jalapeno pepper, mint, cilantro, and lime zest into a mixing bowl. Stir in the lime juice, balsamic vinegar, salt, and pepper to serve.
