Easy and Delicious Pumpkin Bread

Moist, delicious pumpkin bread that is the best I have ever eaten.

Original recipe makes 2 loaves

Ingredients

5 eggs
1 1/4 cups vegetable oil
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 cups white sugar
2 (3 ounce) packages cook-and-serve vanilla pudding mix
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease 2 8×4-inch loaf pans.
  2. Whisk eggs in a large bowl. Add vegetable oil and pumpkin puree; whisk until smooth.
  3. Mix flour, sugar, vanilla pudding mix, baking soda, cinnamon, and salt in a separate bowl; stir into pumpkin mixture. Pour batter into the 2 prepared loaf pans.
  4. Bake in the preheated oven until a toothpick inserted in the center of each loaf comes out clean, 75 to 80 minutes.
