You can make these with or without raisins.
Original recipe makes 3 dozen
Ingredients
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 cup shortening
2 eggs
2 cups packed brown sugar
1 cup strong brewed coffee
1 cup raisins
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
- In a large bowl, cream the shortening, brown sugar and eggs. Stir in the coffee. Gradually blend in flour, baking soda, cinnamon and salt. Stir in raisins if using. Drop by spoonfuls 2 inches apart on cookie sheets.
- Bake 10 to 12 minutes. Let cool on wire racks.
