This recipe is great ending to a hot summer day. It is a family recipe passed down to me from my great grandmother. My grandmother and I use to sit outside with candles all around us with this salad and warm conversation. The original recipe was first used in 1912.
Healthy Salads
Mediterranean Barley Salad
A great chilled whole-grain salad to serve with grilled chicken, or on its own for lunch. Can be improved with a combination of whole grains, but the barley works on its own.
Asian Cucumber Thai Salad
This refreshing salad goes well with fish or chicken. It makes any heavy meal feel lighter with its crisp, light flavors — definitely a favorite in our family.
Black Bean and Rice Salad
This dish is summery and lower in fat than many, yet it’s surprisingly filling. It’s also simple to prepare and uses common ingredients.
Pear and Pomegranate Salad
A fall and winter favorite–I am always eager for pomegranates to come in season so I can make this again. I make my own pomegranate juice by pressing the seeds against a metal sieve.
Polynesian Coleslaw
This coleslaw is different that the garden-variety mayo version. It has very little fat and a very complex flavor.
Macaroni and Tuna Fish Salad
In a rush and need something delicious and tummy filling? This recipe is great for working parents whose children are constantly scouring the refrigerator for food to munch on.
Corn, Sweet Onion, and Tomato Salad
An exciting, cool and refreshing side salad that goes great with grilled meat. Fantastic for get-togethers. You WILL be asked for the recipe! Reserve a piece of sliced tomato and a few cilantro sprigs for garnish.
Balsamic Vinegar Potato Salad
If you enjoy marinated potato salads, this recipe is for you. Definitely a delicious way to enjoy potato salad. I used roasted peppers from a jar. Just as good as fresh.
My Grandma’s Cool Cucumber Salad
This is a very simple recipe from one of the best cooks ever — my grandmother. The proportions are a little ambiguous, use your eye — that’s how the best cooks do it! The secret — be sure and dry the cucumbers well!
Fruity Couscous Salad
To boost flavor and nutrition, prepare the whole-grain couscous with orange juice instead of water.
Apple, Pecan, Cranberry, and Avocado Spinach Salad with Balsamic Dressing
I like using Cripp, Braeburn, or Gala apples in this yummy salad!
Chickpea Salad
A simple and delicious salad of chickpeas (garbanzo beans), onions, cucumber, tomato and vinegar.
Zesty Southern Pasta and Bean Salad
A colorful and simple little side dish that has been a big hit at potlucks and picnics. It is easy to prepare, healthy and delicious!
Couscous, Cranberry, and Feta Salad
This recipe is great hot or cold. I invented it in grad school when I had no time to cook. It’s a quick and easy one dish recipe. I use it as a side dish for nice meals or a full meal for lunch. You can make it in 5 minutes or less and eat immediately. For extra protein you can add chicken breast.
