These pumpkin "Yumkins" are moist, delicious and great tasting.
Original recipe makes 1 dozen
Ingredients
1 cup packed brown sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup pumpkin puree
1 cup chopped walnuts
1 teaspoon vanilla extract
1 (3 ounce) package cream cheese
2 cups confectioners’ sugar
1 tablespoon orange juice
Directions
- Preheat oven to 350 degrees F (175 C). Grease a 1 dozen miniature muffin tin.
- Mix together the brown sugar, flour, baking soda, baking powder, salt, pumpkin, nuts and vanilla. Drop by the spoonful into muffin tin.
- Bake for 15 to 20 minutes, set aside to cool.
- Beat together the cream cheese, sugar and orange juice. Spread over cooled yumkins.
