I concocted this recipe for my longtime friend and colleague Colleen B. for her 60th birthday celebration. Decorate with a sprigs of parsley or dill.
Original recipe makes 24 egg halves
12 hard-boiled eggs, halved lengthwise with yolks and whites separated
1/2 cup mayonnaise
3 tablespoons Dijon mustard
1 tablespoon hot yellow pepper sauce
- Combine egg yolks, mayonnaise, mustard, and hot sauce in a food processor; puree until smooth.
- Spoon egg yolk mixture into a pastry bag with a decorative tip; pipe filling into the cavity of the egg white halves.
