Tasty Sweet Potatoes

An extremely delicious, very low fat sweet potato recipe! Raisins add an extra touch of sweetness. Almost any flavor of fruit juice can be substituted for orange.

Ingredients

5 sweet potatoes, sliced
1/2 cup orange juice
1/4 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Evenly arrange the sweet potato slices in the baking dish. Pour the juice over the potatoes. Sprinkle on the raisins.
  3. Bake in preheated oven 45 minutes, or until the potatoes are tender.
