Banana Butter Icing


Can be used on banana cake, white cake or peanut butter cake.

Original recipe makes 2 1/3 cups


1/4 cup butter, softened
1/2 cup mashed bananas
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
3 1/4 cups confectioners’ sugar


  1. Cream together butter, banana, lemon juice and vanilla. Slowly beat in confectioners’ sugar, adding more if needed to make a nice fluffy, spreadable icing. Makes about 2 1/3 cups.
