Vegan-Friendly Falafel
This is an easy vegan falafel using dried garbanzo beans and ingredients you already have in your cupboard. No eggs or bread crumbs either as filler–just tasty falafel! Serve with tzatziki and typical falafel fare such as lettuce, tomato, and cucumber. It’s not much more work than using canned beans, but the taste is phenomenal and authentic.
Cucumber Avocado Salad
Enjoy this salad made with thinly sliced cucumber, dill, avocado, and red onion. It’s a little sweet and a little tangy, yet fresh and crispy.
Butternut Squash-Sweet Potato Ginger Bisque
This soup is perfect in winter-time. The root vegetables are comforting and the ginger is warming. Increase or decrease the amount of ginger to suit your taste. Chicken or vegetable stock may be substituted for the water. Either a blender or food processor can be used to puree the soup. If desired, add cream instead of yogurt to enrich the taste.

A cool, crisp salad adds crunch and contrast to any menu. You can also use dried cranberries and walnuts.

This is a fabulous dip or side dish packed with beans and great flavors. Everywhere I take it I get requests for the recipe. It can be easily doubled, and it’s a guaranteed hit! Serve with giant corn chips or as a side dish. Kidney beans and navy beans can also be used.
Dill Gazpacho
A fresh and mild gazpacho that takes advantage of all that summer has to offer. Super easy too. Garnish with a sprig of fresh dill and serve chilled.
Orzo and Shrimp Salad with Asparagus
This is a dish that goes together quickly, can be doubled easily, and looks beautiful! Orzo , shrimp and fresh asparagus tossed with a light olive oil, lemon and basil dressing. Perfect for a warm weather picnic. Can be served chilled, at room temperature, or heated!

Delicious fresh herbs and a blend of peppers make this a fresh, light, and healthy dish that can be a side or a main course. My family loves this on warm summer nights.
Spicy Red Bell Pepper Soup
I love this recipe because it uses fresh, sweet red bell peppers, as opposed to roasted red peppers. It’s full of other fresh vegetables and thyme, too, and it freezes exceptionally well. Rice is used as the thickening agent, rather than cream. If you don’t like a lot of spice, reduce the amount of cayenne and red pepper flakes.
Vegetarian Sloppy Joes
This is a combination of many recipes and experimentation. It has gotten the thumbs-up from all who have tried it so far. It can also be made with TVP, ground turkey, or even ground beef instead of tempeh.
Tomato-Mint Quinoa Salad
Even for non-vegetarians, quinoa is a great change to rice or pasta. I’ve been trying to think of more dishes using quinoa and came up with this salad.
Winter Chicken Bake
This is an easy recipe that is warm, hearty, healthy, and colorful. The tartness of the cranberries compliments the sweetness of the barbecue sauce and the mellow sweet potatoes. Homemade barbecue sauce is what I used, but your favorite barbecue sauce will work too.
Crispy Chipotle Lime Tilapia with Cool Avocado Sauce
My husband loves this zesty Southwestern-style fish. You can make it with any of firm whitefish–like cod or halibut–if tilapia isn’t available. You can even use boneless, skinless chicken breasts. I usually make a package of red or black beans with rice to serve with it while the fish cooks. If you have any leftovers, they make great fish tacos.
