Amber’s Zucchini Bread

This is a great alternative to the classic recipe for all the other zucchini bread lovers out there.

Original recipe makes 2 – 8×4 inch loafs

Ingredients

2 cups grated zucchini
3/4 cup egg substitute
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking soda
1 tablespoon ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon baking powder

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 – 8×4 inch loaf pans.
  2. In a large mixing bowl, combine zucchini, egg substitute, sugar, vegetable oil, and vanilla extract.
  3. In a medium size mixing bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, and baking powder. Gradually mix dry ingredients into the zucchini mixture. Pour batter into the prepared loaf pans.
  4. Bake for 40 to 60 minutes.
