Fresh and Light Cucumber Salsa

This is such a fresh and light salsa. I made this one day when I needed some extra ingredients and decided to throw some cucumbers in. I now make this for every picnic or party I go to. It is requested. Wherever I am, I have to give the recipe to someone. I keep this in my fridge at all times and all my kids love it. A great way to get them to eat their veggies.

Frank’s Chopped Salsa

I created this recipe after visiting a local Mexican restaurant I frequent and I picked through the dish to discover the ingredients. I decided I could do a reasonable rendition that would rival the one I ate. I succeeded and people rave about my salsa and always ask me to make some. I got to know the owners and consequently gave them a sample and they said was good and very close to their recipe. Since that time I have made several batches modifying this that and the other. Play with the recipe for a taste treat. Vary the ingredients for a taste treat.

Tomato-Celery Salsa

This is a recipe I made up because I really wanted some salsa and tortillas; however, I was out of salsa. Tomato and celery along with some other ingredients are sauteed in oil and then simmered in tomato juice. It’s a quick fix when you have no salsa. Warm tortilla chips go well with this salsa. Just pop some chips in the oven under the broiler for a few minutes until lightly browned.

Linda’s Summertime Eggplant Salsa

This recipe is a variation of Sicilian Caponata, which is an eggplant relish served in Sicily as a topping for brushetta or as a condiment served with meat or fish. My family loves it as a dip for tortilla chips or even by the spoonful (if no one’s looking!). Be sure to microwave the eggplant, or it will absorb too much oil and become mushy.

Pico De Gallo de Alicia

An authentic Mexican salsa made with tomatoes, onions, and jalapenos. Serve with tacos, nachos, tortilla chips, black beans, refried beans, or fajitas or use as an ingredient in many Mexican recipes. My family uses it as a side in which to dip grilled steak. If you like it hot, then this is for you; this pico is not for the faint of heart. It is very hot, which most people in my circle like. If you don’t like highly spicy dishes, you might might want to try something less spicy or cut down the jalapeno and use a type pepper that is more to your taste.
