Healthy Side Dishes
Spicy Bean and Corn Salsa Side
Our whole family loves this quick and easy side dish. I serve it with tacos, sloppy joes, or picnic meals… Great for potlucks because you serve it cold. Easily adjusted to your individual taste by using your favorite salsa. I often double this for church potlucks or company – it makes a lot to serve as a side and stretch a meal. I usually skip the onions and peppers when making it for guests. I rated this myself for ease and because it is a go-to recipe in my house.
Grilled Asian Asparagus
Hoisin sauce and sesame seeds make this a great twist from boring plain asparagus. Your kids will love it too!
Simple Steamed Artichokes
These steamed artichokes are delicious and light, perfect for an appetizer. Dip the leaves in melted butter or mayonnaise.
Lemon-Lime 3-Herb Pasta
This is a great light pasta dish that goes well with any main dish! Mix and match the herbs. You can use whatever you have on hand.
King Tut’s Cauliflower Farro
I tried this cauliflower farro side at a cooking booth at my local farmer’s market and headed home to reproduce it. It has since become one of my family’s favorite side dishes. It’s vegan too! For a crunchier taste, use the celery and carrot raw.
Lemon Lentil Rice
This is a complete meal with rice lentil and vegetables. This is my version of the South Indian dish ‘Chithrannam’ (lemon rice).
Sweet Potato and Turnip Swirl
The pairing of sweet potatoes and turnips could make a turnip lover out of all of us. Preparation time is 15 minutes. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association.
Grilled Tequila-Cilantro Pineapple
This is an out-of-the-ordinary side dish, that always turns into a conversation piece.
Pumpkin-Carrot Rice
This was a dish my mom made. I am from the Caribbean where pumpkin is a savory vegetable. I serve this with pork chops or roasted pork and it always gets rave reviews. If I am in a hurry, I use canned carrots and mash them.
Lengenberg’s Boiled Potatoes
This is the perfect simple side dish for a couple of German bratwursts or schnitzel.
Glazed Root Vegetables
When combined and lightly glazed with sugar and balsamic vinegar, these vegetables provide a wonderful range of flavors, from earthy to sweet.
Horsey Parsnip Puree
The puree was smooth and tasted very rich, even though it wasn’t. The horseradish gives a little kick that comes in right behind the sweetness of the parsnips.
Sweet Potatoes with Caramelized Onions
Baked sweet potatoes are topped with slow cooked caramelized onions and red bell peppers. Serve with a dollop of sour cream or plain yogurt. Use large sweet potatoes for a delicious meatless main dish.
Seasoned Roasted Root Vegetables
I wanted a vegetable medley good for the fall. I took 3 recipes and changed them up to the following recipe. This recipe is good when reheated in the microwave, or I have frozen some and used later.
Okra Fritters
In the South, okra is every where. I threw together this recipe when trying to come up with something different. When I make this for the kids, I leave out the tomatoes and onion.
Stir Fried Wok Vegetables
This is a simple, Asian-style side dish of stir fried vegetables out of the wok.
Spicy Glazed Sweet Potatoes and Pineapples
This is a great Thanksgiving side dish for those of you who are tired of sweet potatoes with marshmallows. This dish also works well with toothpicks on an appetizer buffet.
Smoky Black Beans
My daughter and I love the black beans found at a popular fast food chicken restaurant, but I could not find a recipe for that particular taste. I think I came pretty close with this one. A little spicy, a little sweet but oh, so good!!! These beans go great with almost any meat but are especially good with grilled chicken.
