Smooth Double Chocolate Frosting
I’ve never liked the heavy texture of buttercream icing, so I came up with this as a smooth and rich alternative. It always gets rave reviews!
Honey-Cocoa Frosting
This recipe was created to go with my whole wheat chocolate chiffon cake. It contains no refined sugar and no egg. For white frosting, reduce the honey to 1/2 cup and omit the cocoa powder.
Orange Glaze II
This glaze is perfect for Bundt cakes or tube cakes. It helps keep the cake fresh and moist.
Blue Ribbon Mincemeat Pie Filling
An old-time delicious mincemeat pie filling. I have frozen this filling in zip-lock baggies, since I don’t use a pressure canner. Apple cider can be used in place of brandy if preferred.
Nutty Cream Cheese Frosting
For those who can’t get enough nuts. Excellent on applesauce, pumpkin and carrot cakes.
Freezer Pie Filling
Makes pie fillings from fresh fruit to freeze for later use. Double, triple or quadruple the recipe as needed. Try using peaches, pears, or cherries.
Mincemeat Pie Filling
A friend gave me this recipe for mincemeat many years ago. It is so good that even those who do not care for mincemeat pie likes it. If preferred, use molasses instead of sorghum. Also, apricot juice can be substituted for the pineapple juice. This makes enough filling for 2 (9 inch) pies.
Vegan-Friendly Caramel Buttercream
This is a rich, caramely buttercream frosting, which pairs perfectly with a simple chocolate cake, or frost an apple cake for a sweet Autumn treat. This icing can also be made with standard ingredients such as milk and butter. It makes enough to frost one two-inch layer cake, or 24 cupcakes.
Quick Pour Chocolate Fondant
This is a great Chocolate Fondant recipe. Pour over the top of cakes or petits fours to make a perfectly smooth and glossy surface. Excess fondant can be stored, tightly covered, in refrigerator for weeks. Reheat to use again.
Jo Ann’s Frosting
A not-so-sweet white frosting alternative that is great for all cakes and decorating needs. This may be tinted with food color if you like.
Russian Creme Fruit Topping
A quick and tasty topping for fresh berries. May be served with a sugar wafer as garnish.
Chef John’s Lighter Lemon Curd
This has all the rich lemony goodness of regular lemon curd with fewer calories and a little less fat. Use it for lemon tarts, on pancakes, or a filling for layer cakes.
Vanilla Buttercream Frosting
Smooth and tasty vanilla buttercream, perfect consistency for decorating any cake.
Cake Fondant
A quick fondant. If you want colored fondant, add a dash of food coloring and knead.
Chili Cream Cheese Frosting
Cream Cheese Frosting with a bite! Warm but not too hot. Great for frosting Cinco ‘de Chili Chocolate Cupcakes or any Cupcakes for that matter. Make it mild or as hot as you like.
Super Delicate Chocolate Buttercream
This is a very delicate and rich chocolate buttercream. It’s good on Gateau Africaine, or any cake needing buttercream frosting.
Chocolate Amaretto Frosting
This is a very rich chocolate frosting, flavored with almond liqueur. A frosting like this will make anything taste good!
Chocolate Torte Frosting
A creamy chocolate frosting good for chocolate cakes. Makes enough to frost one layer cake.
