Crostini Dijonnaise
If you’re going to serve your pate or rillettes with toasted bread and mustard anyway, why not save a step and just make mustard-flavored crostini? That’s the question I asked myself while making a potted duck spread, and this was the answer.
Grilled Squash with Piquant Sauce
This is a wonderful way to liven up those summer squashes. Slices are grilled with a seasoned bread crumb coating and then served with a dollop of sauce on each slice. An excellent side dish variety, especially for meals featuring grilled meat.
Potluck Bagels
Combine ham, cream of chicken soup, cheese, green onions and mayonnaise. Spread on mini-bagels and heat. Easy to prepare, always been a hit at potlucks. Can serve cold or make vegetarian by leaving out the ham and using a vegetarian cream soup.
Peach and Goat Cheese Tartine
For me, this is summer on a slice of bread. August is national goat cheese month (no, I don’t know who decides these things), and what better way to enjoy chevre than by topping it with sweet, ripe, impossibly juicy peach slices? Mix in a little thyme and black pepper to keep things interesting, and you’re looking at a very special treat.

Chocolate Sea Salt Crostini
For this to work as a savory bite, the chocolate must be very dark, bittersweet, and world-class. Look for names that are hard to pronounce. Labels with percentage symbols are always a good sign (the higher the percent, the better).
