Authentic Chile con Queso
This is a true chile con queso that can be eaten with tostadas or in a warm corn tortilla. This is not like the Americanized version of chili con queso that we have become used to that is a cheese dip, which I also love. This is the way my grandma used to make it. The great thing about this recipe is you can play with it and adjust it to your personal taste. If you like it cheesier add more cheese. You can’t mess this up unless you burn it.
Hot Asiago and Spinach Dip

Chicken Artichoke Bacon Dip
This dip was a successful trial. I had extras of odd things and they tasted really good together! Rinsing the artichoke hearts removes most of the brine. I prefer that because I do not like very salty foods. You can skip this step if you’d like it saltier. Put as many of the ingredients in a food processor as you can and let ‘er rip! You really can not mess it up.
Blueberry Brie
Warm Blueberry Brie…we have this every year at our work’s Christmas party. It is so tasty, it’s addictive! You can also make this with raspberry sauce or sun dried tomatoes, both of which taste excellent. This will cook in the microwave in about 3 minutes. Serve with warm French baguette slices!
Mexi-Cheesy Chip Dip
A definite crowd pleaser, and not too spicy for those who usually shy away from chili or salsa dips. Served with tortilla chips. Best served warm, but still retains a good dipping consistency when cold or at room temperature. This dip can be served in a "bread bowl" (a hollowed out round loaf).

Baked Brie with Caramelized Pears, Shallots and Thyme
Brie baked in a round sourdough bread bowl makes this ultimately easy! You could substitute a sweet chutney for the topping for even easier prep. I microwaved the final product for a few minutes to speed up the cooking (couldn’t wait for it to be ready!)
Vidalia Sweet Onion Dip
Creamy, cheesy, yummmmy dip. Use a potato peeler to get the onion very thin. Serve with your favorite cracker.
