Bekki’s Mexican Egg Rolls

It’s adaptable for both for meat-eaters and vegetarians, and is great out of the oven and reheats well. It’s a terrific dish for football parties and whenever you’re attacked by the munchies. Sweet and Spicy Pecans

These pecans have graced our family’s Christmas sweet gift platters. I’ve also sprinkled them over my gourmet salads. They add so much in either case. I can’t get enough of them! Lining the pans with parchment paper makes for easier removal of the pecans and easier cleanup!

I learned to make this on Guam. This is an all purpose sauce and can be used as a marinade, or poured over rice or cooked meat. You can make it as hot or mild as you like. The longer you let it sit the hotter it gets!
